Ruby Coffman is an accomplished human resources leader with more than 27 years of experience across the retail and hospitality industries. She brings deep expertise gained through progressive HR roles supporting both single-site and multi-location operations, partnering closely with leadership teams to drive organizational success.

Prior to joining a full service hotel property as Director of Human Resources, Ruby served as an Area HR Business Partner for a Fortune 50 retailer, where she supported multiple retail locations and partnered closely with operational leaders to drive performance and employee engagement.

Throughout her career, Ruby has developed a strong operational and financial mindset, with expertise in labor management, training and development, employee engagement and investigations, workers’ compensation management, and policy and standard operating procedure development. These experiences shape her strategic yet practical approach to human resources leadership, focused on building consistent, compliant, and people-centered operations.

At the core of Ruby’s work is her commitment to developing high-performing property teams by providing strategic support and practical guidance to leaders, increasing employee retention, and fostering a culture that builds winning, dedicated teams.

Mrs. Coffman holds a bachelor’s degree in business administration, with a concentration in Human Resources, from Stayer University.

Outside of work, Ruby is deeply committed to community service, supporting animal welfare, veterans and military families, first responders, and outdoor community initiatives. In her personal time, she enjoys off-roading in her Jeep, rock crawling, and spending time in nature, which allows her to recharge and reflects her passion for resilience, teamwork, and adventure.
